Starting on any new venture requires committment. Committment requires self discipline; not just words but actions. Today I decided to put my "money where my mouth is" and follow through on the committment I was making to myself: Healthy, happy and satisfied with each day.
7:30am - Woke up and got ready to go for a run. The temp outside was -1'C with a windchill of -8'C. I made a committment to my cousin Jason to run with him and I am a keeper of promises.
8:00am - Started the run with Jason in a freakin blizzard. I thought for sure my face would freeze off. We ran a solid 4k at a 7min pace. Not too bad for the first run in almost 3 months.
9:00am - Got home, and told my daughter (notice I didn't ask) we were heading out to the grocery store to stock up all the things we will need to have healthy living for the next few weeks. Our day was going to be filled with cooking all of the right things so that they are ready at our fingertips. No more "Nothing to eat for dinner, let's order in" for this girl. Well, at least not for the next few weeks.
9:30am - Peanut and I went for breakfast at one of our favourite diners, Sunset Grill. She had a healthy plate of Pemeal Bacon and a side of fresh strawberries, while I had poached eggs, pemeal, spinach and tomatoe. One cup of coffee and I was ready to get going again.
11:30am - We arrived home to find my 13-year old still in bed. I had no hesitation when I started making a lot of noise to get the lazy bugger out of bed!! Along the counter lined about a mile of healthy veggies, organic meats and seasonings; ready to be combined into healthy, freezer ready meals for the next few weeks. While we chopped, peeled, sauteed and stewed...I had a delightful 6-piece serving of home-made, organic Falaffle w/ tastey (from scratch) lemon-dill tahini dressing. It was the perfect lunch/snack to get me through the afternoon.
4:30pm - After nearly 5 hours of cooking it was time to take a break. Coincidentaly it was also the second time I had seen my son all day. Sitting in front of the PS3 playing games with his friends...I was tempted to give a lecture, but since he had been out of my hair, enjoying his vacation, I didn't see the need.
5:30pm - Made a proper lasagna dinner for the kids while I feasted on Gluten Free Turkey Cabbage Rolls w/ Beet, Corn & Kale salad. Totally filling, totally satisfying and absolutely all detox friendly. Following dinner, we all snuggled together on the couch and enjoyed a movie together. It was the perfect ending to a very busy day.
9:30pm - Decided it was time to hit the sack and get a good nights rest for the first day back in the office after almost 2 weeks off for the holidays.
Overall, today was a great day. I was tired at the end and proud of all that I managed to accomplish. Day 2 of 2012 was another success...one day at a time!!
